Great recipe

Our family loves pizza and over the years I have tried many recipes; I have finally found the best recipe. It makes a tasty crust quickly using your food processor. I also tried it using our mixer and it seemed to work just as well, I just put it on a higher level to mix the dough faster (I used the regular attachment, not the dough hook). I find that rolling the dough on cornmeal and baking on our stone results in a nice crisp bottom crust.

I have a few things I have wanted to write about in the last month, but I can't seem to find the time. We celebrated three birthdays in our little family since my last post about Jacob's birthday- Louis is now 37, Chloe is 2, and Gabe is a whopping 15 years old. Seriously, where does the time go? Until I can find some more 'me' time here are a few pictures.

Jacob



Jacob is 12. I cannot believe it! It seems like yesterday Louis was telling him about the last year of his single-digit birthdays and now he is 12. So many new things on the horizon and no doubt, more challenges to come. Jacob has always been a compassionate, sensitive young guy and I hope this next part of his young life will not be too harsh on him. He isn't always a perfect child but he is funny and very intelligent, though naive at times. While he and his brothers do not always get along, he is incredibly helpful and loving to his little sisters. I look forward to the things he says and does because his words and actions are usually unique and often bring a chuckle.

She's looking a little cheeky here and I love it! I cannot believe she is more than two months old already, time is slipping through my fingers. At two months old she is 23 inches long and weighs 11 pounds, 2 ounces.

Of course she is 17 days old now...but we've been busy. I'll try and get some new pictures. At her one week check-up she had gotten back up to her birth weight. She was only in the 10th percentile (which, again, is a change for us- our kids are usually off the chart) but we expect she'll be fine. We just adore her!

enchilada love...

I love Tex-Mex food! I mean I could eat it all the time and never tire of it. And our children seem to enjoy it also, Chloe already eats chips and salsa and loves beans. Here is a really good recipe for veggie enchiladas and the sauce tastes great on beef enchiladas too. Very simple and tasty.

Mr. Matthew




Matthew is a sweet boy who loves soccer, his new baby sister, and meat.
During the Christmas break we took a family drive to Enchanted Rock and upon seeing some roaming cattle Jacob began singing a delightful song about cows. "Cows are so soft and nice", etc. Matthew added to the song: "cows, tasty cows". Not a month later upon receiving an extra strip of pork with his dinner, he holds the meat up with his fork and proclaims, "Behold, the meat" and devours it. I love that when i talk to him on the phone he smacks his lips as if to blow a kiss. he really has a sweet heart.
